These meatballs are quick enough to be a weeknight dinner, but tasty enough to feel like a cheat night meal! They would also be great as a healthy finger food at your next gathering, just pop a toothpick in each one so that they look fancy! I served these with wild rice and sautéed leeks, but they would be delicious with roasted cabbage or even zucchini 'pasta'.
I used my old school, circa 1990's salad shooter to prep the carrots and ginger for this. While you could certainly use a handheld cheese grater or even a food processor for this, I highly recommend you get your hands on one of these if you can! It makes shredding super quick and there are different attachments to pick the size of your 'shred'. Plus, the box makes me feel like I should throw in a hair scrunchie and do the Macarena!
What you need:
1 pound ground Turkey (I prefer the extra lean variety)
1 cup shredded carrots
1 bunch green onions, finely chopped
1 inch piece of fresh ginger, shredded or finely chopped or ground ginger, to taste
1/8th cup of low-sodium soy sauce (Optional for those who are 21 Day Fixin')
1/2-2 teaspoons Sriracha (Any hot sauce will work-- but sriracha makes it feel more Asian Food-y)
1 tbsp. minced garlic or garlic powder
2 tablespoons sesame seeds (Optional, but a good way to fit in your orange container and add some crunch if you are 21 Day Fixin')
What you do:
Pre-heat your oven to 375 and line a baking sheet with foil. Or don't, you're the one who has to do the dishes!
Place your ground turkey in a large bowl. Add your shredded carrots, chopped green onions, ginger, soy sauce, sriracha, garlic, and sesame seeds. Mix it all together. Your hands are going to be gooey, this is why we got the baking sheet out and ready ahead of time people! Your cabinets can thank me later.
Once your meat mixture is well combined, pinch off a golf ball size piece and roll it up between your hands. Place it on the baking sheet and repeat the process about 23 more times. I was able to get two dozen meatballs out of my mixture and fit them all on to one large baking sheet.
Put the baking sheet into the heated oven and bake for 20-25 minutes, or until browned.
Pick out the 6 most fabulous looking meatballs, and chow down!
